Masala Chai

  • 1 Cinnamon Stick (crushed)
  • 2 Bay Leaves
  • 1/8 Tsp. Cumin Seed
  • 6 Whole White Peppercorns
  • Pinch of Turmeric
  • 1/4″ Thin Sliced Ginger
  • 7 Whole Allspice
  • 6 Whole Cloves
  • 3 Tbsp. Darjeeling (Preferably Whole Leaf or at least TFOP)

Simmer 3 cups of water together with 3 cups of whole milk(you can skip the milk to make concentrate), add the spice mixture, and stir whilst keeping a mild boil.

Strain, Serve, and sweeten(trust me) to taste.
